I don't understand why if we combine the raise and the donk we get a result greater than 100%.

You can't just add those two numbers together. If you want a combined statistic for both stats then that would require a custom statistic that sums the actions & opportunities for those two custom statistics in a new custom statistic. An example of that calculation would be:

(60 + 58 / 100 + 100) = 59%
