How do I add text to the display. I know it's right there, but I cant figure out how to do it??

In the Layout Manager, after you select your site and table type (size), select the stat that you want to add text. Directly below the stat pulldown is a 'Formatting' window with a 'Format' input. Enter the text in the 'Format' input.
